The Science Of Why This ‘Hurts’

The Carolina Reaper measures up to 2.2 million Scoville Heat Units. That’s the same heat level as standard pepper spray used for riot control, so you’re willingly drinking something designed to incapacitate people (!)

Capsaicin is the active compound in chilli peppers – an oily alkaloid that plants evolved as a defence mechanism against mammals. It doesn’t actually burn you. It is a chemical con artist. It binds to TRPV1 receptors, heat-activated calcium channels that normally detect temperatures between 37°C and 45°C. Capsaicin forces these channels to open at temperatures lower than your body temperature.

The result, your nervous system genuinely believes you are overheating.
